I have been going back and fourth trying to decide what I wanted to do with my blog. I haven’t given it the attention it deserves but I have taken up a new healthy lifestyle. I have decided that it is now time for Piggy Tummy to take up a new healthy lifestyle too! I will admit a huge reason it took me a while to decide this is that the interweb doesn’t see me..it doesn’t see that I carry more weight than I would like to. You just see my tasty recipes. I am sure you can assume that by the recipes I post I am not a petite little flower though! But I will be!
I fully intend to keep posting my recipes, photos of my recipes but also incorporate healthy weekly menus, how my fitness is going, any ups and downs I experience and overall my journey to getting fit. Since I am a foodie my main focus will be recipes and meal planning. I do plan and prep all my meals over the weekend for the following week. I know a lot of people struggle with planning ahead and I would love to give some ideas to make it an easier process.
So here you go world..this is my start! My before pic (15 lbs down though from my starting weight woot woot)
And here are some of the tasty meals I made ahead for the week
I make and package mine and my boyfriends meals & snacks for the week so I have zero excuses!
I now feel grown up with a fruit bowl
My favorite treat this week has been Greek Chicken Salad
Greek Chicken Salad –
- 1 container of cherry tomatoes, diced
- 1 container of yellow tomatoes, diced
- 1 english cucumber, diced
- 1 red onion, sliced thin
- about 18 Kalamata olives, pitted, chopped
- About 1 lb chicken, diced
- Feta cheese, about 2-3 ounces
- Light Balsamic Vinaigrette, about 2-3 tablespoons
Saute chicken and let cool. Dice all vegetables and mix in a bowl with balsamic vinaigrette. Divide veggies into containers and portion out about 3 ounces of chicken and 1/2 ounce of feta into each container. I divided mine up into 5 containers. Enjoy a delicious flavorful grab and go snack! I add 2 tablespoons of Greek yogurt dressing. I have been using Opa brand Dill & Feta. Its amazing!
I pre-cut all my veggies and pre-portion my favorite dip. Otria brand Spinach & Artichoke.
Another favorite snack this week has been spicy tuna salad with crackers.
2 cans of tuna, 2 tablespoons of plain greek yogurt, 1 tsp real mayo, diced jalapenos, mustard and pepper. I portioned it into 4 small containers and included 1 serving of reduced fat wheat thins. Tasty high protein snack!
And yes..I even portion my peanuts.
